Just thought I would drop you all a line to let you know not only am I my Mom's  favorite boy in the paw family but this is my Mom's good tasting Chicken White Chili. Today is sweater wearing day at our house so I am sitting here watching my Mom go thru her cookbook to make sure she has all the ingredients for this Chili. I am sure I would like it too but it has onions and some spices that are not good for us but hope you will enjoy it. Thanks for reading..........have a great weekend......Bailey!!!! 

Chicken White Chili

1 Tablespoon Olive Oil

1 lb. Chicken tenderloin or Chicken breast, cubed

1 Onion, sliced thin

Heat oil in large skillet over medium heat: add chicken and onion. Saute 10 minutes or until chicken is cooked thru.

Add the following ingredients:

2 cans chicken broth

2 cans Northern Beans, drained and rinsed

1 1/2 teaspoon Garlic powder

1 teaspoon Salt

1 teaspoon Cumin

1 teaspoon Dried oregano

1 cup Sour cream

1 cup Half and Half

Bring to a boil, reduce heat and simmer for 35 minutes.

2 Cups of Monterey Jack Cheese, shredded

add to bowls of soup upon serving.....................................

This is a great soup that can be made in just a matter of minutes..........and all in one pot from start to finish.
